Having a nice breakfast with lots of family and friends is one of my favorite ways to spend the morning. Making breakfast for everyone in the morning however can be a daunting task. So, after researching recipes and playing with my own additions, I give you my tried and true recipe for the best pre-make breakfast casserole ever – enjoy!
Chad’s Sexy Breakfast Casserole
Ingredients:
1 lb chicken apple sausage, browned
12 eggs beaten, or part eggs and part Egg Beaters
2 tsp dry mustard
3 cups cream
1 1/2 tsp salt
2 tsp fresh cracked pepper
4 slices of sourdough bread (cut off crusts and cut into 1″ cubes)
1 cup jack cheese, grated
1 cup crumbled feta
1 1/2 cups chopped spinach (I use frozen, thawed AND drained or patted dry with paper towel to remove moisture)
2 shallots (or one sweet onion), chopped and sautéed first in a little extra virgin olive oil
Preparation:
1) Beat eggs, milk, dry mustard, salt and pepper together.
2) Add browned meat, shallots, spinach, cheese and bread to egg mixture, stir.
3) Pour into buttered 9 X 13 cooking pan
4) Cover and refrigerate overnight
5) Bake uncovered at 325 for 45-50 minutes, or until top is slightly brown and casserole is firm in the middle
BTW – this recipe is called “Chad’s Sexy Breakfast Casserole” in memory of my “Gamps” who used to make a great egg dish for the family called “sexy eggs.” I try to throw a little sexy in every recipe I make in his honor.
